Atta (whole wheat flour)

Preparation Steps

Prepare the Dough

Place the flour in a bowl. Add salt and a little oil. Gradually add water while kneading to form a soft dough.

Kneading

Knead the dough thoroughly for 8–10 minutes. It is essential to make it smooth and soft. Cover it and let it rest for 15–20 minutes.

Make Dough Balls

Divide the dough into small balls (loi). Dust them lightly with dry flour and keep them ready.

Rolling

Use a rolling pin to roll each dough ball into a round roti shape. Do not make it too thin or too thick.

Cooking on the Tawa

Place the roti on a hot tawa (griddle). When bubbles start appearing, flip it. Lightly press the other side while cooking. You can also puff it directly on the flame (optional).

Final Touch

Apply ghee or butter on the hot roti if desired. Keep the rotis covered with a cloth to maintain softness.
