Preparation Steps
Roast the Dalia
In a pan (kadhai), dry roast the dalia until it turns light golden brown. This enhances the flavor and texture.
Prepare the Tempering (Tadka)
Heat oil or ghee in a pressure cooker. Add mustard seeds and cumin seeds. Then add chopped onion and green chili, and sauté lightly.
Cook the Vegetables
Add tomato and all the vegetables. Cook for 2–3 minutes.
Add the Dalia
Add the roasted dalia to the cooker. Mix in turmeric powder and salt. Pour in 3 cups of water.
Cooking
Pressure cook for 2–3 whistles. Turn off the flame and let the pressure release naturally.
Final Touch
Garnish with fresh coriander leaves. You can also add a little ghee for extra taste.
