Poha (flattened rice)
1.5 cup
Onion (finely chopped)
1 medium
Potato (optional, cut into cubes)

Peanuts

Use thick poha, as thin poha can become mushy.
Add lemon juice at the end for a fresh flavor.
Adding a little sugar gives it an authentic taste (you can skip it if preferred).

Preparation Steps
Washing the Poha
Place the poha in a sieve and rinse it lightly with water. Let it rest for 1–2 minutes so it softens slightly (do not soak it for too long).
Frying the Peanuts
Heat a little oil in a pan (kadhai). Add the peanuts and fry until they turn light brown. Remove and keep aside.
Preparing the Tadka
In the same pan, heat some oil. Add mustard seeds and let them crackle. Then add curry leaves and green chilies. Add onions and sauté until light pink. (Optional) Add potatoes and cook for 3–4 minutes.
Adding the Poha
Now add the soaked poha. Add turmeric, salt, and sugar. Gently mix everything together (do not stir too much, or the poha may break).
Final Touch
Add the fried peanuts. Cook on low flame for 2–3 minutes. Turn off the heat and garnish with lemon juice and fresh coriander leaves.
Serving Suggestion
Serve hot poha with a cup of tea. ☕ You can also top it with sev or pomegranate seeds (optional) to make it even more delicious.
